It's Summa Time :)

Go read it if you havent already, Great Read!

So now that I am officially on summer break, I decided to start back reading. I have heard so many ranting and raving about the New York Times Bestseller- Something Borrowed by Emily Griffin. I had seen commercials on TV and people facebooking how wonderful this book is so I called Mandy, well went to her apt, and asked to borrow the book. She was more than happy to let me borrow the book, knowing that I would absolutely LOVE it. I started reading Wednesday night as soon as I finished dinner, the fabulous meal I blogged about. I read til 2 am that morning and had the hardest time putting the book down. Now when I read, I get really into a book. Sometimes it is hard to talk to me, I cry with a book, I laugh with a book, I am just that into what I am reading. What can I say, I am a natural born reader :). Back to the reading, well I finally put it down so I could sleep. Thursday morning I woke up and immediately began reading. I took the dogs out to potty and then grabbed a blanket and went and sat on the balcony to read until it was time to go to the pool with my friend at 2. I got so into the book that I lost track of time and was late going to the pool. While reading, I looked up and noticed this.....I could not do anything but smile because it truly shows me how much my four-legged children love each other. Boy was I a proud mama :)

Any who back  to the story, I took a break for a quick shower before I went to the pool. I finally got the pool an again immediately I pulled out the book and began reading. I had gotten so far into the book that there was no stopping me now. I could visualize everything that was happening in the book in my head, don't you love this. This is when you really know you are into a book, guess that's how I relate to it. I had to be at EXPO training by 4:15 so I texted Mandy and told that I didn't feel like coming to Expo because I couldn't make myself put the but down well Mandy said I had to. Ha but I did bring the book to expo with me, I snuck in some reading during 'my' down time. I finally convinced myself to put the book down long enough to grab drinks with a friend at La Ha for Happy Hour. Ahh, the refreshing taste of a Strawberry Margarita :) and then we hit up Old Navy for the BOGO 50%. I def bought 2 pair of shorts for $30. Finally got back home around 9:30, fixed dusty supper and started back to reading. That night I finished the book and my roommate thought it was funny that I was crying by the time I finished it. Im not going to tell you why I cried because I want you to go out and read it, it's totally worth it. Something Borrowed is a great read and def worth your time. I was very impressed with the book and now I know why people were raping my Newsfeed about their excitement for the movie coming on on May 6th, I believe. Hey good lookin' whatcha got cookin'

Tonight, I cooked an AMAZING meal....for myself :(. Dusty works second shift an hour away so I always have to eat dinner by myself unless a friend comes over. Dusty told me last week, when he was on his health kick, that he needed to eat more pastas. So I immediately thought about my supreme chicken spaghetti....its to die for, well for me at least. Needless to say I am a chicken girl, anything chicken I will usually eat. I love this meal so much that I want to share it with all my followers. I am 100% positive yall will love it. I shared it with my dad not too long ago and he called me as soon as his scarfed it down to tell me how much enjoyed it. I would LOVE for you all the try it an let me know how it turned out for you. Oh yea and for dessert I baked red velvet cheesecake brownies. What a date night I had, a lonely one at that :). The dogs tend to be great company and enjoy staring at the food while Im eating. Hank even drools to let me know how great it smells, some reassurance is great every now and then :). Oh yea, I ate dinner and watched a re-run of The Voice on NBC....if you haven't watched it yet, you are def missing out. It is so good and I am glued to the tv while it is on. This is my second night watching the same episode and I am still blown away.

Chicken Supreme Spaghetti:

Ingredients:
4 chicken breasts (skinned and boned)
2 bunches of green onions...I cant ever find them so I use regular sweet onions 
1 (8oz) pkg of mushrooms .....I DO NOT USE, dont like them
1 pt grape tomatoes, chopped
2 cups Italian dressing...I use Zesty
1 (8oz) pkg spaghetti
1/2 cup grated parmesan cheese

Directions:
Place chicken breasts in a single layer in a lightly greased baking dish. Top evenly with onions, tomatoes, and mushrooms. Pour 1 cup dressing over chicken and vegetables.
Bake, covered, at 375F for 45 minutes. Remove chicken and veggies from oven; let stand 10 minutes. Shred chicken with two forks
Cook Pasta according to package directions and drain. Combine shredded chicken mixture and spaghetti (I always add in more dressing, that 1 extra cup if the pasta is a little dry but I use a 16 oz spaghetti pkg) Top evenly with 1/2 cup parmesan cheese or your desire.

This is such a great meal the next day too :) Hope you enjoy.

Red Velvet Cheesecake Brownies
Ingredients

Brownies
1/2 cup butter
2-oz dark chocolate, coarsely chopped
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 1/2 tsp red food coloring
2/3 cup all purpose flour
1/4 tsp salt


Cheesecake Mixture
8-oz cream cheese, room temperature
1/3 cup sugar
1 large egg
1/2 tsp vanilla extract

Directions:
Preheat oven to 350F. Line an 8- or 9-inch square baking pan with aluminum foil and lightly grease.
In a small, heatproof bowl, melt butter and chocolate together. Stir with a fork until very smooth. Set aside to cool for a few minutes.
In a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. Add in the chocolate mixture and stir until smooth. Batter should be red. If a brighter red is desired, add an additional 1/2 tsp food coloring. Add flour and salt into the bowl and stir until everything is just combined and no streaks of dry ingredients remain.
Pour into prepared pan and spread into an even layer.
Prepare cheesecake mixture. In a medium bowl, beat cream cheese, sugar, egg and vanilla extract until smooth. Drop in dollops onto prepared brownie batter. Gently swirl two batters with a butter knife.
Bake for 35-40 minutes, until brownies and cheesecake are set. A knife inserted into the cheesecake mixture should come out clean and the edges will be lightly browned.
Cool in the pan completely before slicing and serving, either at room temperature or chilled.
Brownies can be refrigerated, covered, for several days.
Makes 16 large brownies or 24 smaller brownies

Help?! (please)

Yes, I will take some help. As most of you all know, I am engaged and now that I am into the swing of the summer and nothing better to do than look up wedding ideas. Here lately I have been attempting to look up Bridal Shower themes. I have had several, 4, people to tell me that they would like to throw me a bridal shower and for me to let them know what kind of shower I wanted to have. I would love some input from you all on ideas about Bridal Showers. I am not getting married until next July but I want to go ahead and have everything laid out and ideas flowing, so things are not just thrown together. So throw some ideas at me for a bridal shower!!! The ones I have thought about were stock the room, monogram and margaritas or mimosas, and then im lost... See how lost I am, I really need help and the internet is not helping me :(

Im Back

Sorry I have been MIA for over a week. This past week has been super stressful so I didnt have much time  for me time. I can officially say that I am on Summer Break and a Senior in college :) :) :). I had a fantastic Easter. I was able to spend it with Family who I do not get to see very often. My day started early yesterday because I wanted to go to church with my Mama. While at church a little old lady told me that I was getting prettier the older I got....I will take that as a compliment. :). I had dinner at my Memaw's. I ate wayyyyyy too much but it was all worth it. But no worries, I went to my daddy's but instead of eating there we went to the park. My step-sisters and step-brother-in-laws met us at the park and we played ball from 2:30 pm to 8:30 pm. Talking about being pooped, I felt the aching as soon as I was able to sit down last night. I played ultimate frisbee last night, and boy was that fun :). I could get used to working out if it consisted of playing ultimate frisbee. I really enjoyed Easter with the family, but too bad Dusty couldnt be there. His work doesnt consider Easter a holiday :(. I hope all yall had a wonderful Easter holiday.

Friday Formal

Tonight is the big night...well not so big because I'm going STAG :(. Dusty has to work and I'm going to my sorority's formal alone. Its okay because Dusty doesn't like to dance nor be around all those catty girls as he would call them. See the thing was that I did have a date up until Tuesday when my date had to follow the "bro-code" and turn my offer down. I completely understand his support for his friend's heartbreak (not really, his obsession just got crushed) but he could of still came out with me and had fun. I promised that I would keep my hands to myself---JUST kidding! I am on the JUST LOOK, NO TOUCH restrictions now. ha ha. Thanks to one of my good friends, Megan, I am going to wear a very stylish dress.

I have to behave tonight because I have to play cosmetologist tomorrow and get my sister ready for her Senior Prom! She just loves her big sissy so much that she wanted me and only me to do her hair and make-up. Nah....not really, I was the only one who would do it for free. Aren't I super nice?!?! Ha Ha. I am so excited for Kaylei because I picked her dress out and plus she is TEENY TINY and I treat her like my little puppet. She tells me all the time that she doesn't like my style and she wishes that I would stop showing her clothes I would wear because they ARE NOT what she likes to wear. BUT she did let me pick out her Prom Dress. I believe I got a tear in my eye when she said I did a good job. Kaylei called me yesterday and informed me she wanted me to do her hair like Taylor Swift's and this is what I have come up with.......







I definitely had to watch tutorials all last night to figure out how to do this but then its not that hard. Come to find out its just curly hair twisted up with bobby pins. No Biggie, nothing a little  lot of hairspray and some bobby pins cant do! ha

Just to say...

THANK YOU! As most of yall know Mandy over at MissMandyMac took mine and Dusty's engagement pictures this past weekend! The shoot was so much fun! Im not going to lie, I thought Dusty was going to be a big grumpy pants and not want to cooperate but he did amazing. I only think he did it because of Mandy. Him and Mandy were like 2 peas in a pod---kind of scary but they kept me smiling all day. I was in awe when I seen how great the pictures turned out and I cannot wait to use the save the dates. I am so blessed to have such an AMAZiNG friend in my life. She is a great person with some great talents! I cant wait til the big day so I can have you standing beside me! Love you mean it! and most of all THANK YOU, I owe you so much!!

5QF and suggestions

This is my all time favorite. I cant wait to get pictures of my engagement ring. :) This is so exciting. :)

I hope all of you are having a fantabulous Friday. I have been slaving over my final nutrition project all day and to my surprise I accomplished to only finish THREE (yea, only 3 :( ) pages. Its okay I will work on it hopefully this weekend..if not then I will just cram it in on Monday. This weekend is super exciting, well I think it is at least. Miss Mandy Mac have graciously offered to take our engagement pictures this weekend. She has talked about taking us to this gorgeous town to take some picture and then going to an old railroad track....ahhhh I cant wait!!  I am super pumped about this, hopefully the weather will be pretty! I even went and get my diamond cleaned and spiffy for this affair. I cant wait! Dusty on the other hand is not thrilled at all.  One being because he HATES taking pictures and Two, he would rather be fishing with my dad. I cant wait!!!!....eek. I hope all of you guys have a wonderful weekend!
 Questions:
1. If you could change one thing about yourself what would  it be?
This should be an easy question, right? Well of course most girls would say her weight or maybe her looks. I honestly was going to say that but how cliche. I am trying so hard to lose weight so I will not say that one and I believe that its that I'm not the hottest thing that has walked this earth, Dusty still loves me. ha ha. If I could change anything about me I would change the way my legs are. I am knotted kneed and it bothers me. I am so self conscious when it comes to shorts because I walk funny and my knees rub together. I had surgery in 7th grade but it was too late when I had it because by that time I had already stopped grown :(

2. Write about a time you got lost?
I dont get lost!!! ha ha I cant remember a time that I got lost. I believe I have a great sense of direction. I have a GPS but never use it. I will think about this question and get back to yall. 


3. Camping or 5 star hotel?
I would say 5 star hotel. I have never been to one so I would like to go. Plus I'm from the country and I'm used to camping so why not try something new. 


4. Have you donated blood?
 No I have never donated blood. 


5. Do you have a budget or do you 'fly by' most months?
Most of the time I fly by but I do stay within a certain amount. I limit myself....make sense?? I am very big on making sure I have enough money. I like to be prepared in case of emergencies or if I absolutely need money to buy something.
